Cupcake Jemma Biscoff Rocky Road This is insanely delicious!
Ingredients:
8″ SQUARE
500g White Chocolate
300g Biscoff Cookies
300g Biscoff Spread
50g Melted Unsalted Butter
1/4 tsp Salt
1/4 tsp Vanilla Extract
3 Cups of Mini Marshmallows
Instructions:
- Line an 8 x 8 pan with parchment paper
- Melt white chocolate in a double boiler
- In a large bowl Crush cookies into little bits, reserving some for decorations
- Add the marshmallows to the crushed cookies and mix together, then set aside
- Heat the biscoff spread in the microwave for a short time to “loosen” in
- Mix the spread into the melted white chocolate
- Melt the butter then stir it into the sauce mix
- Add in the salt and vanilla and stir well
- Pour the sauce into the cookie/marshmallow mix and stir to combine
- Pour the entire mixture into the prepared pan and press down
- Sprinkle remaining crushed cookies and extra marshmallows on top
- Put into the fridge and allow to set for at least 40 minutes
