Biscoff Rocky Road

Cupcake Jemma Biscoff Rocky Road This is insanely delicious!

Ingredients:

8″ SQUARE

500g White Chocolate

300g Biscoff Cookies

300g Biscoff Spread

50g Melted Unsalted Butter

1/4 tsp Salt

1/4 tsp Vanilla Extract

3 Cups of Mini Marshmallows

Instructions:

  1. Line an 8 x 8 pan with parchment paper
  2. Melt white chocolate in a double boiler
  3. In a large bowl Crush cookies into little bits, reserving some for decorations
  4. Add the marshmallows to the crushed cookies and mix together, then set aside
  5. Heat the biscoff spread in the microwave for a short time to “loosen” in
  6. Mix the spread into the melted white chocolate
  7. Melt the butter then stir it into the sauce mix
  8. Add in the salt and vanilla and stir well
  9. Pour the sauce into the cookie/marshmallow mix and stir to combine
  10. Pour the entire mixture into the prepared pan and press down
  11. Sprinkle remaining crushed cookies and extra marshmallows on top
  12. Put into the fridge and allow to set for at least 40 minutes
