IP Thai Peanut Chicken

Ingredients

  • 2 cloves garlic
  • Fresh ginger (Squeeze?)
  • 2 green onions
  • 1.5 lbs boneless chicken
  • 2 tsp garlic chili paste
  • 1/2 cup coconut milk
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 2 tbsp fresh lime juice
  • 1/3 cup creamy peanut butter
  • Chopped peanuts
  • Rice/Rice Noodles

Method

  1. Sauté chicken, garlic, and ginger until chicken is no longer pink. Turn off IP.
  2. Add in chili paste, coconut milk, soy sauce, honey, and lime juice and stir.
  3. Place peanut butter on top of chicken and do not stir.
  4. Cook on high pressure 5 minutes. Allow to rest 5 minutes, then vent.
  5. Stir peanut butter into chicken.
